Ingredients

Easy vegetable toppers:

  • Chopped green onions

  • Chopped leaks

  • Seaweed (you can buy them in packs)

  • Bean sprouts

  • Mushrooms

  • Corn

  • Spinach

  • Cabbage

  • Fresh minced garlic

  • Ginger

  • Sliced Radishes

  • Bok choy

  • Bamboo shoots

  • Shredded carrots

  • Pickled vegetables (easier to find in Asian markets)


Easy Proteins

  • Boiled egg

  • Tofu

  • Chicken

Preparation

The Broth

You can go simple, most noodle packages come with broth seasoning, or you can substitute it with bone broth and doctor it with the following: 

  • 6 tablespoons of soy sauce

  • 1 tablespoon of rice vinegar (you can also use white wine vinegar but you have to add ½ tablespoon of sugar to offset the sourness)

  • 1 tablespoon of mirin (you can also use white wine vinegar but you have to add ½ tablespoon of sugar to offset the sourness)

  • 1 tablespoon of Sesame seed oil (optional)
